potluck

I'm heading off to a potluck this evening. As this potluck is for artists, I decided to make something colourful. Here is my offering. It's Roasted Asparagus and Yellow Pepper Salad. Yummy!

And while I'm enjoying my potluck, Jerzy will be eating the mushrooms he picked earlier today on his walk with Luka.

Might need the recipe, to that one Kate! It looks too good.
I am a salad fiend...even though we tend to eat salad in warmer months, I still sneek in a little rocket & parmesan salad every now & then! I just can't help myself!
"Potluck" sound like a great way to get together with like minded friends.
Are those mushrooms, Pine Mushrooms? They look sensational.
Gorgeous colour and texture.

I would love to have the recipe for your salad! I'm always looking for new things with low or no carbs for my diabetic fiance.

I got this recipe from a friend and she got it from a recipe website. Follow the link below for the basic recipe but I recommend the following modifications. The recipe uses a LOT of oil so I just tossed the asparagus and peppers in a few tablespoons of olive oil before putting them on the baking sheet (rather than drizzling 1/4 cup over them). And I reduced the dressing recipe in half before tossing with the final ingredients. You could even go a third. I'm not sure what salad seasoning mix is, but I'm sure you will add your own touches to make it an excellent salad. Enjoy!

jo...there are three types of mushrooms. Jerzy uses the Polish names but we looked them up and the Latin family names are (from top to bottom): lactarius deliciosus, leccinum, suillus.
